Sweet Potatoes with Peanuts

- Khoai lang nau (Vietnam)

Ingredients

  • 2 c. water
  • 1/2 c. sugar
  • 2 medium sweet potatoes, peeledand cut into chunks
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. chopped roasted peanuts

 

Sweet Potatoes with Peanuts

Directions

  1. In a large saucepan, bring water and sugar to a boil over high heat.
  2. Add sweet potatoes and cover. Turn heat to low and simmer for 10 minutes, or until tender.
  3. In a colander, drain sweet potatoes and place in a serving bowl.
  4. Add salt and pepper and stir.
  5. Sprinkle with peanuts and serve hot.
